All these re prepared the traditional way , washed, soaked , dried indoors gently and ground to a fine flour at our in-house mills ( we have our own flour mills to grind all our flour)
Use this to make PUTTU, KOZHUKATTAI / MODAK OR SEVAI
METHOD for PUTTU
• Add powdered Himalayan salt to taste
• Sprinkle water a little at a time and mix through the dough with your fingers , breaking up any lumps that form. Add very little water just enough to make the flour a bit damp , not like a paste or batter.
• Get the puttu steamer ready with the base perforated plate.. fill upto 1/3 with the flour ( do not compact it, just leave it lightly pressed in place) add a layer of grated fresh coconut about a fistful, fill next 1/3 with the rice flour and another layer of coconut and repeat one more layer.
• Steam it in the puttu steamer for about 8 minutes to 10 .. Once steam comes through the lid of the steamer, remove the puttu steaming tube, open the lid and slide out the puttu onto a banana leaf/ plate and serve with kondakadalai curry, pappadam and banana slices..
• And if you don’t have a puttu steamer on hand, Just mix together the grated coconut and puttu flour and salt and steam it in small bowls or in idly moulds too!
