Amaranth, locally known as Rajgira, is a complete vegetarian source of  protein and  contains all the 9 essential amino acids needed by the body.  

Amaranth is:

  • Gluten- free: So if you suffer from a gluten allergy, add this tasty protein-rich grain to your diet.
  • The only grain, which contains Vitamin C.
  • Is high in iron, magnesium, phosphorous and potassium.
  • Has twice the amount of calcium as milk.
  • Has far more lysine, an amino acid, than any other grain, which is needed by the body to metabolise fatty acids, absorb calcium and is necessary for strong, healthy, thick hair.
  • Has five times the amount of iron and three times the amount of fibre, compared to whole wheat flour.

Amaranth is classified as a pseudocereal, meaning that it’s not technically a cereal grain like wheat or oats, but it shares a comparable set of nutrients and is used in similar ways. Its earthy, nutty flavor works well in a variety of dishes.

Besides eating it like a porridge, you can also make it into  delicious rotis, parathas and daliya.
